The right size, 17 cm blade and 29.5 cm in total, it is light and easy to handle and can be used well, making it very practical and well balanced during work. The blade is in X50CrMoV15 steel, a good alloy composed of chromium, molybdenum and vanadium, while the handle is instead in stainless steel, in order not to be affected by continuous and long-lasting contact with the hand, often wet or sweaty.
This oriental kitchen tool is the most used cutting tool in Japanese domestic kitchens, because it is easy to use and because it goes well with all foods, always providing a good service. We have no idea if it takes its name, translated "three virtues", for the foods it can cut or instead for the ways in which it can be used.
